Veggie Scramble

4 eggs
4 asparagus stalks, chopped
1/2 red bell pepper, chopped
1/4 cup white onion, chopped
1/2 cup white mushrooms, chopped
1/2 tablespoon butter or oil

In a large skillet, on medium high heat place butter or oil. Once the butter melts and pan becomes hot add asparagus and onions. Once the onions start to become translucent, add in the other veggies.

In a small mixing bowl, crack eggs and mix them real well. Pour the mixed eggs over the veggies in the skillet. With a rubber spatula mix in the eggs with the veggies, then let them rest to cook in skillet. once the eggs and veggies have cooked on one side, flip them over and let cook on other side.

Once you pour the eggs into the skillet, the eggs should cook in 5 mins or less. Eggs will be done when they are firm and no longer a liquid substance. Let them cool before serving. You can top them with cheese or sour cream and salsa. Enjoy!
