Stuffed Acorn Squash

 

This past weekend was a little gloomy. I was craving something warm and hearty. I wanted to make chili but my husband was sick of me making that. So that’s when I thought about making stuffed acorn squash. I was trying to be a little healthy with this recipe!

 

  • 4 small or medium acorn squash
  • 1 tablespoon oil
  • 1 lb. ground mild sausage
  • 1/2 white onion, chopped
  • 2 celery stocks, chopped
  • 8 ounces sliced mushrooms, chopped
  • 1 tablespoon garlic, minced
  • *½-1 cup shredded cheese, to garnish

Preheat oven to 400 degrees.

 Poke holes in squash by using a fork. Then place the acorns in a baking dish. Add ¾ to 1 cup of water in baking dish, then cover and place in oven. Let the acorn’s cook for 1 ½ hours until the outsides are no longer firm to the touch.

 In a large skillet on medium heat add the oil. Once the skillet is hot add in the sausage, onions, and celery. Once the sausage is cooked, drain off the excess grease and add the mushrooms, and garlic. Cook in skillet until the mushrooms are tender. Then set aside.

 Once the acorns have cooled; cut the top off. With a spoon scrap the inside to remove the pulp and seeds. Fill the acorn squash with 2-3 big spoonful’s of the sausage mixture. Top off with a little cheese. Enjoy!
