Strawberry Pretzel Salad

I needed a good recipe to make for the fourth of July….I called my MIL (mother-in-law) and asked her if she had any great ideas. She gave me one of her mother’s recipes…this one! I had never had this before, but I’m always willing to try new recipes! She was telling me a cute story about this recipe, that I thought I should share. She told me when her mom would make this growing up they called it a “salad” instead of a “dessert” so they could still have dessert afterwards! I am happy to share this family recipe with you and hope your family enjoys this new “salad”!

2 cups crushed pretzels

¾ cup butter, melted

1 cup + 3 tablespoons granulated sugar, divided

8 ounces cream cheese, softened

8 ounces whipped topping, thawed

6 ounces strawberry flavored gelatin

2 cups boiling water

20 ounces frozen raspberries (strawberries work great too!)

1 cup blueberries to garnish

 

Preheat oven to 400° F. In a medium mixing bowl, stir together crushed pretzels, melted butter and 3 tablespoons of sugar. Mix well and press mixture evenly into a 9×13 baking dish. Bake for 8-10 minutes. Set aside to cool.

In a large mixing bowl cream together cream cheese and 1 cup of sugar. Fold in whipped topping. Spread mixture onto the cooled crust.

Dissolve gelatin in boiling water. Stir in the still frozen raspberries (or strawberries) and allow the gelatin to set briefly. When the gelatin mixture starts to become thick, pour evenly over cream cheese layer. If you are adding blueberries place them on top and gently press into gelatin. Refrigerate for 2-3 hours. Slice into squares. Enjoy!
