Sausage and Potato Skillet

Some nights I don’t feel like making a big meal….c’mon we all get this feeling! Well this is a dish I had tried over at a family members house a long time ago. They had only made it with plain potatoes which I liked. When I decided to copy the recipe I thought that adding the sweet potato would add the perfect taste to this recipe. I think I was right! Try this recipe out, and it can soon become an easy family friendly meal to enjoy!

13 ounces smoked polish or kielbasa sausage, cut into slices

1/2 medium white or yellow onion, chopped

1 russet potato, cut into chunks

1 sweet potato, cut into chunks

1 1/2 cups baby carrots

1/2 teaspoon garlic powder

1/2 teaspoon pepper

1/4 teaspoon crushed red pepper flakes

(I used 1 tablespoon of Saucy’s Seasoning)

 

In a large skillet, on medium heat, add sausage and onions. As the sausage begins to cook it will release the fatty oils. Once this happens add in the potatoes, carrots and spices.

The Potatoes

Reduce the heat to low add about a cup of water or broth and let simmer for 10 minutes. Make sure to keep an eye on the skillet. This dish will be ready when all the potatoes and carrots are tender and fully cooked.

Adding in potatoes and cooking until tender.

* Saucy Tip: to save time cook potatoes and carrots in microwave. Once they are cooked add to skillet. This way you won’t have to add the water.
