Ranch Pea Salad

Pea salad

The other day we were invited to a BBQ that was spur of the moment! I just love summer time hanging out with friends! So I quickly needed to make something to bring! Luckily I had all of these ingredients to make this quick awesome summer pea salad! Also it’s so much cheaper making it, than running to your grocery store deli and having to pay for it by the pound! Plus you’ll have the satisfaction of knowing you made an awesome side dish with barely any cooking! I hope you find this recipe to be helpful for you and your summer BBQ!

5 thick slices of bacon, chopped

½ cup sour cream

½ cup mayonnaise

1 ½ tablespoons dry ranch powder

½ teaspoon Saucy’s Seasoning or Salt, Pepper, Garlic powder.

½ – ¾ cup cheese, cubed

½ red onion, thinly chopped

1 tablespoon fresh parsley, chopped

Start by placing the frozen peas into a strainer. Run cold water over them for a quick rinse. Set aside; let peas thaw and dry. You will want to keep the peas semi frozen while you mix them into the dressing. If thawed completely you run the risk of mush pea salad.

To cook the bacon use a frying pan. Set the stovetop heat to medium low and let the strips cook until crispy. Once crispy, transfer bacon to a plate with paper towels to soak up the excess grease. Let the bacon cool before chopping.

In a large mixing bowl add the rest of the ingredients. Mix it well. Then add peas and bacon. Give the peas a good tossing to make sure they all become coated with the dressing.

This pea salad is ready to serve! Place in the fridge to serve later too! Enjoy!
