I was at Costco the other week and saw they had mango salsa in a huge jar. I have always loved mango salsa but I was in need of a different flavor I was so bored of mango salsa. I racked my brain for different things I could add into salsa like oranges, strawberries, blueberries…..and then PINEAPPLE came to mind!!! Now I’m sure somewhere out there someone else has already done this recipe but I wanted to make my own!  This recipe makes a lot of salsa so be ready for it. I froze half a batch for 3 weeks and when I was ready for more, it was like I had just made it fresh! The pineapple in this recipe really brings a nice sweet taste to the salsa. Once you try this you will be wanting more!! I used it to top everything, even my egsg in the morning!

Ingredients
  • ½ medium white onion
  • 3 large tomatoes, seeded (aprox. 2 ½ cups)
  • 1- 1 ½ cups pineapple, chopped and strained
  • 1 medium jalapeno, some seed removed
  • ½ cup fresh cilantro, packed
  • 1 tablespoon fresh lime juice
  • 2 teaspoons ground cumin
  • A pinch of salt to taste
  • 1 cup corn
  • 1 bag of tortilla chips
Instructions
  1. Place onion in food processor and pulse until finely chopped. Strain any excess juice, and place into a medium bowl. Repeat this step with the tomatoes and pineapple.
  2. Then add into the food processor the jalapeno, cilantro, and lime juice. Pulse until chopped, add to bowl.
  3. In the medium bowl add cumin, salt and corn. Toss salsa together and refrigerate for 20 minutes before serving. Enjoy!
