Many of my childhood memories revolve around food…. Funny huh? Well I remember I had this childhood next-door neighbor that I would play with all the time. Her and I were inseparable for many years! We would always have dinner over at each other’s places and I loved going over to hers. They always had good food and good warm bread they would serve every night! Anyways this post isn’t about the bread….. it’s about how to this day I still remember having a certain pasta salad that was served. I never asked for the recipe or where this creation came from. I just remember it was delicious and it’s stuck in my head ever since! I have created this recipe from my food memory bank and I must say it turned out just like I remembered it tasting! Hopefully you’ll like this recipe and it would be a great side dish to accompany any summer meal or great to take to a picnic or BBQ.

½ lb small shell noodles

8 ounces cheddar cheese, chopped

1 cup sweet pickles, chopped

¾ cup Catalina salad dressing (California, Western, Red Sweet Dressing)

¼ cup pickle juice

 

Follow the direction on the box of noodles. They usually want you to boil noodles until al dente. The noodles should be cooked, soft to bite but also a little firmness. Drain the noodles from the water and place into a large mixing bowl.

 

While the noodles are cooking, begin to cut up the cheese and pickles. There isn’t a certain size you need to cut them into but I like them to be around the same size as the noodles.

 

Add cheese, pickles, dressing, and pickle juice to the noodles. Mix everything together. Cover bowl with plastic wrap and refrigerate for two hours. Serve this salad cold at your next BBQ! Enjoy!
