Honey Mustard Pork Loin

 

Like most weeknights I am always searching for that quick semi-healthy meal. I have turned a plain pork loin into a flavor busting loin, with three simple ingredients! What!? Did she just say three, 3, tres. ingredients! Yes, I did! Just get a pork loin add some honey, grain mustard, brown sugar and you’ll be set!

4 Tablespoons pure honey

4 Tablespoons grain mustard (like a deli mustard with horseradish added)

1 Tablespoon brown sugar

2 carrots (optional)

 

Place the pork loin in the bottom of the slow cooker. I added two carrots to the bottom to prevent the meat from sticking. You can also add ½ cup of water to prevent sticking as well.

 

In a small bowl, mix the honey, mustard and brown sugar. Then place half of the sauce over the pork loin, and set aside the rest. Place the lid on slow cooker and let cook for 4 hours on low.

 

After the pork loin has cooked; take out and place on a cutting board. Cut ½ inch thick slices. Pour the remaining sauce over the sliced pork loin. Serve with a side of mashed potatoes and veggies. Enjoy!
