Cucumber Salad

With it being summer and hot I know I don’t want to turn on the oven to cook…. but I also do need to make stuff for dinner. And then there’s the part of wanting to eat something somewhat healthy and fresh. I again went to my fridge to find what I could add to our grilled burgers. I came up with a quick cucumber salad that really doesn’t take much time. You just need to chop it all up and toss it in a bowl! It’s so easy for a hot summer evening!

1 cucumber, sliced

½ medium red onion, sliced thinly

3 plum tomatoes, chopped

1 tablespoon white vinegar

3 tablespoons red wine vinegar

½ teaspoon garlic powder

¼ teaspoon pepper

pinch of salt

 

  • Add fresh herbs to add more flavors!

 

You will need to make sure all veggies are cleaned. Start with the cucumber; I peeled some of the skin off. It’s up to you if you want it to stay on. Then chopped it so it stays in the circle form. Next cut the onion into thin strips. The tomatoes can be cut whatever way you like. I chopped mine into large cubes. Place these chopped veggies into a medium bowl. Add the vinegar and spices then toss it all together.

You can serve immediately or let sit in the fridge for a couple hours. Enjoy!
