Corn and Black Bean Salad

  • 1 can of black beans (drained and rinsed)
  • ½ cup onion chopped (red, yellow or white works)
  • 1 ½ cups of corn (fresh or frozen)
  • ½ cup of cilantro (loosely packed)
  • 2 cloves of garlic (chopped)
  • 2 teaspoons of lime juice
  • 3 dashes of jalapeno Tabasco (green bottle)
  • Sprinkle of cayenne pepper (optional)
  • 1 teaspoon of ground cumin
  • ¼ teaspoon of smoked paprika (regular works)
  • Pinch of salt and pepper
  • * You can also add Avocado, Red Pepper or Green Pepper

Add all the ingredients in a medium mixing bowl. Toss all the ingredients, make sure everything is well combined. Try to add the avocado last so it stays in it’s shape. I like to let my salad chill for an hour before serving. Serve with chips, add to a burger or tacos! Enjoy!
