Chive Potatoes

Here’s a real simple way to make chive potatoes. I love making these whenever I am cooking for guests, I feel like you can never go wrong with potatoes and butter.

  • 8 red potatoes
  • 1 tablespoon salt (divided)
  • ½ teaspoon pepper
  • 1 clove garlic (minced)
  • 5 tablespoons of Butter
  • ½ cup chopped fresh chives

Wash the potatoes real good and make sure the skin is clean. Cut the potatoes into ½ inch squares or something bite size.

In a medium saucepan add ½ tablespoon of salt and about 4 cups of water or enough to just cover the potatoes. Bring the potatoes to a boil, let them continue to boil for 15 – 20 minutes. To check and see if the potatoes are ready insert a fork in a potato, if it falls off the potato quickly it is done cooking. Take the potatoes off the burner and drain the water.

In a serving bowl add butter, garlic, salt, pepper, and chives. Add the potatoes and gently give them a good toss. Make sure all the potatoes are well coated and the butter has melted. Serve the potatoes warm. Enjoy!
