Asparagus and Chicken Casserole

 

 I created this recipe when I was in need of a family dinner. I was sick of making all my other “Casserole” and “Hotdish”  recipes. SO I do what I usually do, look in the fridge, then freezer, then the pantry to scour over what was in the house! I was able to rummage up a few things and look what I came up with! This is a very simple recipe and like other casseroles it’s easy!

 

2-3 chicken breasts

1 bunch of asparagus, ends trimmed, then chopped

1/2 cup white onion, chopped

4 cups cooked rice

2 cans cream of mushroom

1 cup shredded cheese

1 tablespoon garlic, minced (powder works)

Salt and pepper

1 sleeve Ritz crackers, broken to pieces

3 tablespoons butter, melted

* add 1 cup sour cream if you like….. I do!

 

Preheat oven to 350 degrees. In an oven proof pan add chicken. Season with salt and pepper. Cover with foil and bake for 20 minutes until the chicken is no longer pink throughout. Slice or chop chicken and set aside.

Make rice according to directions. Then set aside.

In a large mixing bowl add asparagus, onion, cream of mushroom, cheese, prepared rice, garlic, salt and pepper. If you are adding sour cream you can add it in the bowl. Also add the rice to the bowl. Mix all these ingredients together and pour into a large greased casserole dish.

On top of the rice mixture, evenly sprinkle the chopped chicken. Next sprinkle the broken Ritz crackers over the top. Pour the melted butter over the crackers. Cover with a lid or foil and bake for 25 minutes. Remove cover and cook for another 10 minutes. Let cool before serving! Enjoy!
